Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas
  • 1/4 cup teriyaki sauce
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup cooked wild rice

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add chicken and cook until no longer pink, about 5-6 minutes.
  3. Add garlic and stir for 30 seconds.
  4. Toss in all veggies and stir-fry for 4-5 minutes until crisp-tender.
  5. Pour teriyaki sauce over the mixture and stir to coat evenly.
  6. Cook for another 2 minutes until sauce thickens slightly.
  7. Serve hot over cooked wild rice.
