Ingredients

- 2 boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 1 cup snap peas
- 1/4 cup teriyaki sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 cup cooked wild rice
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add chicken and cook until no longer pink, about 5-6 minutes.
- Add garlic and stir for 30 seconds.
- Toss in all veggies and stir-fry for 4-5 minutes until crisp-tender.
- Pour teriyaki sauce over the mixture and stir to coat evenly.
- Cook for another 2 minutes until sauce thickens slightly.
- Serve hot over cooked wild rice.
Notes
- Swap chicken for tofu or shrimp for a different protein.
- Use low-sodium teriyaki sauce if needed.
- Add a sprinkle of sesame seeds for extra crunch.
