Ingredients

  • 1 cup Cooked crab meat
  • 1 cup Cooked scallops
  • 1/2 cup Celery, diced
  • 1/2 cup Red bell pepper, diced
  • 1 cup Cucumber, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Fresh lemon juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Dijon mustard
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Fresh parsley, chopped

Instructions

  1. In a large bowl, combine the cooked shrimp, crab meat, scallops, celery, red bell pepper, cucumber, and red onion.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and black pepper.
  3. Pour the dressing over the seafood mixture and toss gently to combine.
  4. Add the chopped parsley and toss again.
  5. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
  6. Serve chilled as a refreshing main dish or appetizer.
