- 1 pound Cooked shrimp
- 1 cup Cooked crab meat
- 1 cup Cooked scallops
- 1/2 cup Celery, diced
- 1/2 cup Red bell pepper, diced
- 1 cup Cucumber, diced
- 1/4 cup Red onion, finely chopped
- 1/4 cup Fresh lemon juice
- 2 tablespoons Olive oil
- 1 teaspoon Dijon mustard
- to taste Salt
- to taste Black pepper
- 1/4 cup Fresh parsley, chopped
Instructions
- In a large bowl, combine the cooked shrimp, crab meat, scallops, celery, red bell pepper, cucumber, and red onion.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and black pepper.
- Pour the dressing over the seafood mixture and toss gently to combine.
- Add the chopped parsley and toss again.
- Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
- Serve chilled as a refreshing main dish or appetizer.
Notes
- Feel free to add other seafood like lobster or calamari.
- This salad can be made a day in advance for convenience.
