Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 ripe mango, diced
  • 1 lime, juiced
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, garlic, and ginger. Cook for 3 minutes until softened.
  3. Stir in red curry paste and cook for 1 minute.
  4. Pour in coconut milk, fish sauce, and brown sugar. Simmer for 5 minutes.
  5. Add salmon fillets to the skillet. Cover and cook for 8-10 minutes until salmon is done.
  6. Gently stir in diced mango and lime juice. Cook for 1 minute.
  7. Garnish with fresh cilantro before serving.

Notes

  • For extra heat, add a pinch of red pepper flakes.
  • Use fresh mango for the best flavor.
  • Serve with steamed rice or quinoa.
