Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup jasmine rice
- 1 (14 oz) can coconut milk
- 1 cup chicken broth
- 1 tbsp coconut oil
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 lime, juiced
- 1/4 cup cilantro, chopped
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- Heat coconut oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then sear in the skillet for 5-6 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté garlic and ginger for 1 minute until fragrant.
- Add rice, coconut milk, chicken broth, soy sauce, honey, lime juice, and red pepper flakes. Stir well.
- Bring to a simmer, then place the seared chicken on top.
- Cover and cook on low heat for 20 minutes until rice is tender and chicken is cooked through.
- Garnish with cilantro before serving.
Notes
- Use full-fat coconut milk for creamier rice.
- Adjust honey for more or less sweetness.
- Substitute brown rice for a healthier option, but increase cooking time.
