- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup boiling water
- 1/2 cup butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk
- Food coloring (red, green, yellow) for decoration
- Sprinkles or edible decorations (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes.
- Stir in boiling water until well combined (the batter will be thin).
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- In a separate bowl, beat the softened butter with an electric mixer until creamy. Gradually add powdered sugar, mixing until smooth.
- Add vanilla extract and milk, mixing until you reach your desired frosting consistency.
- Divide the frosting into three bowls and add food coloring to each (red, green, and yellow) to create a festive look.
- Frost the cooled cupcakes with the colored frosting, using a piping bag for decoration.
- Top with sprinkles or edible decorations for an extra festive touch.
