This rich and indulgent chocolate lava cake has a gooey chocolate center that flows out when you cut into it. Perfect for chocolate lovers and a great dessert for special occasions!

- 1/2 cup (115g) unsalted butter, plus more for greasing
- 1 cup (170g) semi-sweet chocolate chips
- 2 large eggs
- 2 large egg yolks
- 1/4 cup (50g) granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- Powdered sugar for dusting
- Vanilla ice cream (optional, for serving)
Instructions
- Preheat your oven to 425°F (220°C). Grease four ramekins with butter and place them on a baking sheet.
- In a microwave-safe bowl, melt the butter and chocolate chips together in 30-second intervals, stirring until smooth.
- In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and thick.
- Add the melted chocolate mixture to the egg mixture, stirring to combine.
- Gently fold in the flour and salt until just combined, being careful not to overmix.
- Divide the batter evenly among the prepared ramekins.
- Bake for 12-14 minutes, until the edges are firm but the center is still soft.
- Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate.
- Dust with powdered sugar and serve immediately with vanilla ice cream if desired.
Notes
- For a richer chocolate flavor, use dark chocolate chips instead of semi-sweet.
- Make sure not to overbake, as the center should remain gooey.
- These can be prepared ahead of time and stored in the fridge before baking. Just add a couple of extra minutes to the baking time.
