- 1 large sweet potato, peeled and diced
- 1 ripe avocado
- 1/4 cup plain Greek yogurt
- 1 tbsp lime juice
- 1 clove garlic, minced
- 1 tbsp olive oil

- 1/4 tsp black pepper
- 1/2 tsp paprika
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, pepper, and paprika. Roast for 25 minutes.
- Season chicken with salt and pepper. Grill or pan-sear for 6-7 minutes per side.
- Blend avocado, yogurt, lime juice, and garlic until smooth.
- Slice chicken and serve with roasted sweet potatoes and avocado sauce.

- For extra flavor, add cumin to the sweet potatoes.
- Use coconut yogurt for a dairy-free option.
