- 1 pound boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground paprika
- 1 teaspoon ground turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 4 pita breads
- 1 cup tahini sauce or garlic sauce
- 1 cup sliced cucumbers
- 1 cup diced tomatoes
- 1/2 red onion, thinly sliced
- Fresh parsley for garnish
Instructions
- In a large bowl, mix together olive oil, cumin, coriander, paprika, turmeric, garlic powder, onion powder, cinnamon, salt, and pepper.
- Add the chicken thighs to the bowl and coat them well with the marinade. Cover and let marinate for at least 30 minutes or up to overnight in the refrigerator.
- Preheat your grill or skillet over medium-high heat. Cook the chicken for about 5-7 minutes per side, or until fully cooked through and slightly charred.
- Remove the chicken from the heat and let it rest for a few minutes before slicing it into thin strips.
- To assemble the shawarma, place some sliced chicken on a pita bread, add cucumbers, tomatoes, and onions, and drizzle with tahini or garlic sauce.
- Garnish with fresh parsley and wrap the pita around the filling. Serve warm.
