  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • Pita bread, for serving
  • Fresh vegetables (tomatoes, cucumbers, lettuce) for garnish
  • Garlic sauce or tahini sauce for serving

Instructions

  1. In a large bowl, combine the olive oil, lemon juice, minced garlic, cumin, paprika, turmeric, cinnamon, coriander, salt, black pepper, and cayenne pepper. Mix well.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your grill or stovetop grill pan over medium-high heat.
  4. Remove the chicken from the marinade and discard the remaining marinade.
  5. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Then slice the chicken into thin strips.
  7. Serve the sliced chicken in pita bread with fresh vegetables and drizzle with garlic sauce or tahini sauce.
