Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper (optional for heat)
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1/4 cup plain yogurt
  • Juice of 1 lemon
  • Pita bread or flatbreads for serving
  • Fresh vegetables (tomatoes, cucumbers, lettuce) for topping
  • Tahini sauce or garlic sauce for drizzling

Instructions

  1. In a large bowl, combine minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, salt, pepper, olive oil, yogurt, and lemon juice.
  2. Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat your grill or oven to medium-high heat.
  4. Remove chicken from the marinade and grill for 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Alternatively, bake in the oven at 400°F (200°C) for 25-30 minutes.
  5. Once cooked, let the chicken rest for 5 minutes before slicing it thinly.
  6. Serve the sliced chicken in pita bread or flatbreads with fresh vegetables and drizzle with tahini or garlic sauce.

Notes

  • For extra flavor, marinate the chicken overnight.
  • You can also use chicken breasts if preferred, but thighs are juicier.
