Ingredients

  • 500g chicken breast, cut into strips
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp ginger, grated
  • 1 clove garlic, minced
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1/2 cup coconut milk
  • 20 bamboo skewers, soaked
  • For peanut sauce: 1/2 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1/2 tsp red chili flakes
  • 1/4 cup coconut milk

Instructions

  1. Mix soy sauce, lime juice, ginger, garlic, turmeric, cumin, and coconut milk in a bowl.
  2. Add chicken strips and marinate for at least 30 minutes.
  3. Thread chicken onto soaked skewers.
  4. Grill or pan-fry skewers for 3-4 minutes per side.
  5. For peanut sauce, mix peanut butter, soy sauce, lime juice, honey, garlic, chili flakes, and coconut milk.
  6. Serve satay with peanut sauce.
