- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil for frying
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to an even thickness for uniform cooking.
- Season the flour with salt and pepper in one bowl.
- In a second bowl, place the beaten eggs.
- In a third bowl, combine breadcrumbs and grated Parmesan cheese.
- Dredge each chicken breast in the seasoned flour, dip in the egg, and then coat with the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a large skillet over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side, until golden brown.
- Transfer the fried chicken to a baking dish. Spoon marinara sauce over each piece, then top with shredded mozzarella cheese.
- Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh basil if desired and serve hot.
Notes
- For extra flavor, marinate the chicken in Italian dressing for an hour before breading.
- Serve with pasta or a fresh salad for a complete meal.
