Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups egg noodles
- 1 tablespoon lemon juice (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are tender, about 5-7 minutes.
- Add the garlic and cook for an additional 1 minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Stir in the shredded chicken, thyme, parsley, salt, and pepper. Reduce the heat and let it simmer for 15-20 minutes.
- Add the egg noodles and cook according to package instructions until al dente, about 6-8 minutes.
- If desired, stir in lemon juice before serving for an extra zing.
- Serve hot and enjoy!

- For a richer flavor, use homemade chicken broth.
- Feel free to add other vegetables like peas or corn for added nutrition.
