Ingredients

- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- 4 cups egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Pour in the chicken broth and bring to a boil.
- Add shredded chicken, thyme, parsley, and bay leaf. Season with salt and pepper.
- Reduce heat and let it simmer for 20 minutes.
- Add egg noodles and cook according to package instructions until tender.
- Remove bay leaf, adjust seasoning if needed, and serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, use homemade chicken stock.
- Feel free to add other vegetables like peas or corn.
- This soup can be frozen for later use; just add noodles when reheating.
