Ingredients

  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 4 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add shredded chicken, thyme, parsley, and bay leaf. Season with salt and pepper.
  6. Reduce heat and let it simmer for 20 minutes.
  7. Add egg noodles and cook according to package instructions until tender.
  8. Remove bay leaf, adjust seasoning if needed, and serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, use homemade chicken stock.
  • Feel free to add other vegetables like peas or corn.
  • This soup can be frozen for later use; just add noodles when reheating.
