- 2 boneless, skinless chicken breasts, diced
- 2 cups fresh spinach, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add diced onions and cook until softened.
- Add chicken, garlic powder, salt, and pepper. Cook until chicken is no longer pink.
- Stir in chopped spinach and cook until wilted.
- Sprinkle shredded cheese evenly over the mixture.
- Transfer skillet to the oven and bake for 10-12 minutes until cheese is melted and bubbly.
- Remove from oven, let cool slightly, and serve.
Notes
- Use an oven mitt when handling the hot skillet.
- For extra flavor, add a pinch of red pepper flakes.
