A deliciously creamy and cheesy dip loaded with grilled corn and perfect for sharing at parties or enjoying as a snack.

- 4 ears of corn, husked and cleaned
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- 1/2 cup diced red bell pepper
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10-15 minutes, turning occasionally until charred on all sides. Remove from the grill and let cool.
- Once cooled, cut the kernels off the cob and set aside.
- In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, lime juice, garlic powder, and chili powder. Mix until smooth.
- Add the grilled corn, cheddar cheese, green onions, red bell pepper, salt, and pepper to the mixture. Stir until well combined.
- Transfer the dip to a baking dish and spread evenly.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until bubbly and golden on top.
- Serve warm with tortilla chips.
Notes
- For added spice, mix in some diced jalapeños or a pinch of cayenne pepper.
- You can substitute the cheddar cheese with pepper jack for a spicier version.
- This dip can be made ahead of time and baked just before serving.
