Ingredients

  • 4 ears of corn, husked and cleaned
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/2 cup diced red bell pepper
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally until charred on all sides. Remove from the grill and let cool.
  3. Once cooled, cut the kernels off the cob and set aside.
  4. In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, lime juice, garlic powder, and chili powder. Mix until smooth.
  5. Add the grilled corn, cheddar cheese, green onions, red bell pepper, salt, and pepper to the mixture. Stir until well combined.
  6. Transfer the dip to a baking dish and spread evenly.
  7. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until bubbly and golden on top.
  8. Serve warm with tortilla chips.

Notes

  • For added spice, mix in some diced jalapeños or a pinch of cayenne pepper.
