- 4 large bell peppers, any color
- 1 cup cooked rice
- 1 lb cooked chicken, shredded or diced
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced tomatoes
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chicken broth
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix cooked rice, chicken, onion, tomatoes, garlic powder, paprika, salt, and pepper.
- Stuff the peppers with the mixture.
- Place peppers in a baking dish and pour chicken broth into the bottom.
- Cover with foil and bake for 25 minutes.
- Remove foil, sprinkle cheese on top, and bake for another 10 minutes until cheese melts.
- Serve warm.
Notes
- Use pre-cooked chicken or rotisserie chicken for convenience.
- Adjust spices to your taste.
- Substitute brown rice for a healthier option.
