Description

Ingredients

  • 4 large bell peppers, any color
  • 1 cup cooked rice
  • 1 lb cooked chicken, shredded or diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chicken broth

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a bowl, mix cooked rice, chicken, onion, tomatoes, garlic powder, paprika, salt, and pepper.
  4. Stuff the peppers with the mixture.
  5. Place peppers in a baking dish and pour chicken broth into the bottom.
  6. Cover with foil and bake for 25 minutes.
  7. Remove foil, sprinkle cheese on top, and bake for another 10 minutes until cheese melts.
  8. Serve warm.
