- 4 large bell peppers, any color
- 2 cups cooked chicken, shredded
- 1 cup Alfredo sauce
- 1 cup cooked rice
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix shredded chicken, Alfredo sauce, rice, mozzarella, Parmesan, garlic powder, salt, and pepper.
- Stuff peppers with the mixture.
- Drizzle with olive oil and place in a baking dish.
- Bake for 25-30 minutes until peppers are tender.
- Let cool for 5 minutes before serving.

- Use precooked chicken for faster prep.
- Adjust cheese to your preference.
- Add red pepper flakes for extra heat.
