- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 cup vegetable oil
- 3 large eggs
- 2 cups grated carrots
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease a bundt pan.
- In a bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, beat sugars, oil, and eggs until smooth. Stir in carrots.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Pour half the batter into the bundt pan.
- Beat cream cheese, sugar, egg, and vanilla until smooth. Spoon over batter.
- Top with remaining batter. Bake for 50-55 minutes.
- Cool in pan for 10 minutes, then invert onto a wire rack.

- Use room-temperature cream cheese for smoother filling.
- Grate carrots finely for even distribution.
- Let cake cool completely before slicing.
