Ingredients

  • 1 medium butternut squash, peeled and sliced
  • 2 large onions, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp sugar
  • 1 tsp balsamic vinegar
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss butternut squash with olive oil, salt, and pepper. Roast for 25 minutes.
  3. In a pan, melt butter and cook onions with sugar until caramelized (15-20 minutes). Add balsamic vinegar.
  4. Roll out puff pastry on a baking sheet. Prick with a fork.
  5. Layer caramelized onions and roasted squash on the pastry.
  6. Brush edges with beaten egg.
  7. Bake for 20-25 minutes until golden.
