Ingredients

- 1 medium butternut squash, peeled and sliced
- 2 large onions, thinly sliced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp sugar
- 1 tsp balsamic vinegar
- 1 sheet puff pastry, thawed
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Toss butternut squash with olive oil, salt, and pepper. Roast for 25 minutes.
- In a pan, melt butter and cook onions with sugar until caramelized (15-20 minutes). Add balsamic vinegar.
- Roll out puff pastry on a baking sheet. Prick with a fork.
- Layer caramelized onions and roasted squash on the pastry.
- Brush edges with beaten egg.
- Bake for 20-25 minutes until golden.

- Slice squash evenly for uniform cooking.
