- 12 oz fettuccine pasta
- 1 lb chicken breast, sliced
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook fettuccine according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add sliced chicken and Cajun seasoning, cooking until the chicken is browned and cooked through, about 5-7 minutes.
- Add chopped onion, bell pepper, and garlic to the skillet. Sauté until the vegetables are tender, about 3-4 minutes.
- Pour in chicken broth and bring to a simmer. Reduce heat and stir in heavy cream and Parmesan cheese. Cook until the sauce thickens slightly.
- Add the cooked pasta to the sauce, tossing to coat evenly. Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
