A hearty and comforting cabbage soup made with ground beef, perfect for a warm meal any time of the year.

- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups cabbage, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Add diced onion and minced garlic to the pot. Cook until the onion is translucent, about 3-4 minutes.
- Stir in chopped cabbage, diced carrots, and diced celery. Cook for another 5 minutes until the vegetables begin to soften.
- Add the canned diced tomatoes (with juices), beef broth, dried thyme, salt, black pepper, and bay leaf. Bring to a boil.
- Reduce heat and let simmer for 30 minutes, stirring occasionally, until the vegetables are tender.
- Remove the bay leaf before serving. Enjoy your cabbage soup with ground beef hot.
