Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups cabbage, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Add diced onion and minced garlic to the pot. Cook until the onion is translucent, about 3-4 minutes.
  3. Stir in chopped cabbage, diced carrots, and diced celery. Cook for another 5 minutes until the vegetables begin to soften.
  4. Add the canned diced tomatoes (with juices), beef broth, dried thyme, salt, black pepper, and bay leaf. Bring to a boil.
  5. Reduce heat and let simmer for 30 minutes, stirring occasionally, until the vegetables are tender.
  6. Remove the bay leaf before serving. Enjoy your cabbage soup with ground beef hot.
