Quick and easy Buffalo Chicken Quesadillas ready in 20 minutes. Cheesy and spicy, perfect for a snack or meal.

- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1/4 cup blue cheese crumbles (optional)
- 2 tablespoons butter, melted
Instructions
- Preheat a large skillet over medium heat.
- In a bowl, mix the shredded chicken with buffalo sauce.
- Place a tortilla in the skillet and sprinkle with a layer of cheddar and mozzarella cheese.
- Add a layer of the buffalo chicken mixture on top of the cheese.
- Sprinkle with blue cheese crumbles if desired.
- Top with another layer of cheese and place a second tortilla on top.
- Brush the top tortilla with melted butter.
- Cook for 3-4 minutes until the bottom is golden brown, then flip and cook the other side.
- Remove from the skillet and cut into wedges.
- Repeat with remaining tortillas and filling.
Notes
- Adjust the amount of buffalo sauce to your preferred spice level.
- Serve with ranch or blue cheese dressing for dipping.
- Use rotisserie chicken for a quicker preparation.
