- 4 cups fresh peaches, peeled and sliced
- 1 cup brown sugar, packed
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 1 cup granulated sugar
- 1/2 teaspoon nutmeg (optional)
- Vanilla ice cream for serving (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the sliced peaches, brown sugar, cinnamon, vanilla extract, and lemon juice. Mix well and set aside to allow the flavors to meld.
- In another bowl, whisk together the flour, baking powder, salt, and granulated sugar.
- Pour in the melted butter and milk, and mix until smooth.
- Pour the batter into a greased 9×13 inch baking dish.
- Spoon the peach mixture over the batter, spreading it evenly.
- Sprinkle nutmeg on top if desired.
- Bake for 40-45 minutes or until the cobbler is golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving. Serve warm with vanilla ice cream if desired.
Notes
- For best results, use ripe but firm peaches.
- This cobbler can be made with frozen peaches, just be sure to thaw and drain them before using.
- Feel free to add other spices such as ginger or allspice for extra flavor.
