Description
A rich and moist cake made with finely chopped dates, covered in a luscious toffee sauce. This classic British dessert is perfect served warm with a scoop of vanilla ice cream.

- 8 ounces (225g) pitted dates, chopped
- 1 teaspoon baking soda
- 1 cup (240ml) boiling water
- 4 ounces (113g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- For the toffee sauce:
- 1 cup (240ml) heavy cream
- 1 cup (200g) brown sugar, packed
- 4 ounces (113g) unsalted butter
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking dish.
- In a bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for about 10 minutes until softened.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the flour mixture to the butter mixture, alternating with the date mixture. Start and end with the flour mixture.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the toffee sauce. In a saucepan, combine the heavy cream, brown sugar, and butter over medium heat. Stir until the sugar is dissolved and the sauce is smooth.
- Once the cake is done, let it cool slightly before cutting into squares. Serve warm with toffee sauce poured over the top.

- For best results, let the pudding sit for a few hours or overnight before serving to enhance the flavors.
- Serve with a scoop of vanilla ice cream or a dollop of whipped cream for added indulgence.
