Ingredients

  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 1/4 cup cooked bacon or sausage, crumbled (optional)
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Fresh spinach or arugula (optional)
  • Salsa or hot sauce for serving (optional)

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. In a skillet over medium heat, add the diced onion and bell peppers. Sauté until softened, about 3-4 minutes.
  3. Pour the egg mixture into the skillet with the vegetables. Cook, stirring gently, until the eggs are fully cooked, about 5 minutes.
  4. Remove from heat and stir in the shredded cheese and crumbled bacon or sausage if using.
  5. Warm the tortillas in a separate skillet or microwave until pliable.
  6. To assemble, place a portion of the egg mixture in the center of each tortilla. Top with fresh spinach or arugula if desired.
  7. Fold the sides of the tortilla over the filling and roll it up tightly from the bottom to the top.
  8. Serve with salsa or hot sauce on the side if desired.

Notes

  • You can customize your breakfast wrap with any vegetables or proteins you prefer.
  • These wraps can be made ahead of time and stored in the refrigerator for up to 3 days.
