- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced bell peppers
- 1/4 cup diced onion
- 1/4 cup cooked bacon or sausage, crumbled (optional)
- 4 large flour tortillas
- Salt and pepper to taste
- Fresh spinach or arugula (optional)
- Salsa or hot sauce for serving (optional)
Instructions
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- In a skillet over medium heat, add the diced onion and bell peppers. Sauté until softened, about 3-4 minutes.
- Pour the egg mixture into the skillet with the vegetables. Cook, stirring gently, until the eggs are fully cooked, about 5 minutes.
- Remove from heat and stir in the shredded cheese and crumbled bacon or sausage if using.
- Warm the tortillas in a separate skillet or microwave until pliable.
- To assemble, place a portion of the egg mixture in the center of each tortilla. Top with fresh spinach or arugula if desired.
- Fold the sides of the tortilla over the filling and roll it up tightly from the bottom to the top.
- Serve with salsa or hot sauce on the side if desired.
Notes
- You can customize your breakfast wrap with any vegetables or proteins you prefer.
- These wraps can be made ahead of time and stored in the refrigerator for up to 3 days.
- To reheat, simply microwave for 30-60 seconds until warmed through.
