Ingredients

  • 1 cup of rolled oats
  • 1/2 cup of honey or maple syrup
  • 1/2 cup of peanut butter or almond butter
  • 1/4 cup of mini chocolate chips
  • 1/4 cup of dried fruit (raisins, cranberries, or apricots)
  • 1/4 cup of chopped nuts (almonds, walnuts, or pecans)
  • 1 teaspoon of vanilla extract
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, honey or maple syrup, peanut butter, and vanilla extract. Mix until well combined.
  2. Add in the mini chocolate chips, dried fruit, chopped nuts, and salt. Stir until everything is evenly distributed.
  3. Line a baking dish with parchment paper and pour the mixture into the dish. Press down firmly with a spatula to create an even layer.
  4. Refrigerate for at least 1 hour to set.
  5. Once set, remove from the dish and cut into squares or bars.
  6. Store in an airtight container in the refrigerator for up to a week.
