This hearty breakfast casserole is perfect for potlucks and feeds a crowd! It’s packed with eggs, cheese, and your choice of breakfast meats and veggies.

- 12 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1 pound breakfast sausage or bacon, cooked and crumbled
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cubed bread (optional)
- 1 tablespoon olive oil (for greasing the dish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Stir in the cheese, cooked sausage or bacon, bell peppers, onions, and cubed bread if using.
- Grease a 9×13 inch baking dish with olive oil.
- Pour the egg mixture into the prepared baking dish and spread evenly.
- Bake in the preheated oven for 30-40 minutes, or until the eggs are set and the top is golden brown.
- Allow to cool for a few minutes before slicing into squares and serving.
