  • 8 ounces pasta (fettuccine or penne recommended)
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach (fresh or frozen)
  • 8 ounces Boursin cheese (garlic & herb flavor)
  • 1/2 cup chicken broth
  • Parmesan cheese for serving (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and season with garlic powder, onion powder, salt, and pepper.
  3. Cook chicken until golden brown and cooked through, about 5-7 minutes.
  4. Add cherry tomatoes and spinach to the skillet. Cook for another 2-3 minutes until the spinach wilts.
  5. Reduce heat to low and stir in Boursin cheese and chicken broth. Mix until cheese is melted and creamy.
  6. Add the cooked pasta to the skillet and toss to combine, ensuring pasta is well coated with the sauce.
  7. Serve warm, topped with Parmesan cheese and fresh basil if desired.
