- 8 ounces pasta (fettuccine or penne recommended)
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup spinach (fresh or frozen)
- 8 ounces Boursin cheese (garlic & herb flavor)
- 1/2 cup chicken broth
- Parmesan cheese for serving (optional)
- Fresh basil for garnish (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and season with garlic powder, onion powder, salt, and pepper.
- Cook chicken until golden brown and cooked through, about 5-7 minutes.
- Add cherry tomatoes and spinach to the skillet. Cook for another 2-3 minutes until the spinach wilts.
- Reduce heat to low and stir in Boursin cheese and chicken broth. Mix until cheese is melted and creamy.
- Add the cooked pasta to the skillet and toss to combine, ensuring pasta is well coated with the sauce.
- Serve warm, topped with Parmesan cheese and fresh basil if desired.
Notes
- You can use any type of pasta you prefer.
- Feel free to add other vegetables like bell peppers or zucchini.
- For added flavor, consider marinating the chicken in Italian seasoning before cooking.
