Instructions
- In a large bowl, combine the strawberries, blueberries, raspberries, sugar, and lemon juice. Toss gently to coat the berries in the sugar and let sit for 15 minutes until they release their juices.
- In another bowl, whip the cream with the vanilla extract until soft peaks form.
- Fold the whipped cream into the berry mixture until just combined.
- Spoon the berry and cream mixture into the graham cracker crust, spreading evenly.
- Refrigerate for at least 2 hours before serving to allow it to set.
- Slice and serve chilled, garnished with extra berries if desired.
Notes
- For added flavor, consider drizzling honey over the berries before folding in the whipped cream.
- This dessert can be made a day in advance and stored in the refrigerator.
