Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar (for dusting)
  • 4 large eggs
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the flour and mix until just combined to form the crust. Press the mixture into the bottom of the prepared baking dish.
  4. Bake for 15 minutes or until lightly golden.
  5. While the crust is baking, prepare the filling. In a separate bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  6. Pour the filling over the baked crust and return to the oven. Bake for an additional 20 to 25 minutes, or until the filling is set.
  7. Remove from the oven and allow to cool completely in the baking dish.
  8. Once cooled, dust with powdered sugar and cut into squares.

Notes

  • For an extra zing, you can add more lemon zest to the filling.
  • These lemon bars can be stored in the refrigerator for up to a week.
