These lemon bars are the perfect balance of tart and sweet, with a buttery crust and a smooth, tangy filling.

- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/4 cup powdered sugar (for dusting)
- 4 large eggs
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the flour and mix until just combined to form the crust. Press the mixture into the bottom of the prepared baking dish.
- Bake for 15 minutes or until lightly golden.
- While the crust is baking, prepare the filling. In a separate bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
- Pour the filling over the baked crust and return to the oven. Bake for an additional 20 to 25 minutes, or until the filling is set.
- Remove from the oven and allow to cool completely in the baking dish.
- Once cooled, dust with powdered sugar and cut into squares.
Notes
- For an extra zing, you can add more lemon zest to the filling.
- These lemon bars can be stored in the refrigerator for up to a week.
