Description

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 12 small corn tortillas
  • Oil for frying
  • Sour cream, salsa, and guacamole for serving

Instructions

  1. In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and cooked through. Drain excess fat.
  2. Stir in chili powder, cumin, salt, and pepper. Mix well and remove from heat.
  3. Add shredded cheese to the beef mixture and stir until melted and combined.
  4. In a separate pan, heat oil over medium heat for frying.
  5. Warm the corn tortillas in a dry skillet or microwave until pliable.
  6. Place 2-3 tablespoons of the beef mixture in the center of each tortilla, roll tightly, and secure with a toothpick if necessary.
  7. Fry the taquitos in hot oil until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
  8. Serve warm with sour cream, salsa, and guacamole.
