- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- 12 small corn tortillas
- Oil for frying
- Sour cream, salsa, and guacamole for serving
Instructions
- In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and cooked through. Drain excess fat.
- Stir in chili powder, cumin, salt, and pepper. Mix well and remove from heat.
- Add shredded cheese to the beef mixture and stir until melted and combined.
- In a separate pan, heat oil over medium heat for frying.
- Warm the corn tortillas in a dry skillet or microwave until pliable.
- Place 2-3 tablespoons of the beef mixture in the center of each tortilla, roll tightly, and secure with a toothpick if necessary.
- Fry the taquitos in hot oil until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
- Serve warm with sour cream, salsa, and guacamole.
