A classic creamy beef stroganoff made with tender beef and mushrooms in a rich sauce, served over egg noodles.

- 1 pound beef sirloin, cut into thin strips
- 1 medium onion, chopped
- 2 cups mushrooms, sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- Salt and pepper to taste
- 8 ounces egg noodles
Instructions
- Cook the egg noodles according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil and butter over medium-high heat. Add onions and cook until translucent.
- Add the mushrooms and garlic, cooking until the mushrooms are tender.
- Increase the heat to high and add the beef strips, cooking until browned.
- Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and cook for 5 minutes.
- Reduce heat to low and stir in the sour cream. Cook until heated through.
- Season with salt and pepper to taste.
- Serve the beef stroganoff over the cooked egg noodles.
