Ingredients

  • 1 pound beef sirloin, cut into thin strips
  • 1 medium onion, chopped
  • 2 cups mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • 8 ounces egg noodles

Instructions

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add onions and cook until translucent.
  3. Add the mushrooms and garlic, cooking until the mushrooms are tender.
  4. Increase the heat to high and add the beef strips, cooking until browned.
  5. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer and cook for 5 minutes.
  6. Reduce heat to low and stir in the sour cream. Cook until heated through.
  7. Season with salt and pepper to taste.
  8. Serve the beef stroganoff over the cooked egg noodles.
