- 1 lb beef sirloin, sliced into thin strips
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- Salt and pepper to taste
- 8 oz egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the egg noodles according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the beef strips and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and sliced mushrooms. Cook until the onions are translucent and the mushrooms are tender, about 5-7 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Bring the mixture to a simmer.
- Reduce heat to low and stir in the sour cream until well combined. Return the beef to the skillet and cook until heated through, about 2-3 minutes. Season with salt and pepper to taste.
- Serve the beef stroganoff over the cooked egg noodles and garnish with fresh parsley.
Notes
- For extra flavor, you can add a splash of white wine to the sauce.
