  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat.
  2. Add the beef stew meat and brown on all sides, about 5-7 minutes.
  3. Remove the beef from the pot and set aside. In the same pot, add the chopped onion and garlic, cooking until softened.
  4. Stir in the beef broth, scraping the bottom of the pot to release any browned bits.
  5. Add the browned beef back into the pot along with carrots, potatoes, celery, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. If you prefer a thicker stew, mix cornstarch with water in a small bowl and stir into the stew during the last 10 minutes of cooking.
