  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 celery stalks, sliced
  • 4 potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef stew meat and brown on all sides.
  2. Add onion and garlic to the pot, cooking until the onion is translucent.
  3. Stir in the carrots, celery, and potatoes, cooking for another 5 minutes.
  4. Add diced tomatoes, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, until the beef is tender.
