Ingredients

- 2 lbs beef stew meat, cut into cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 celery stalks, sliced
- 4 potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add beef stew meat and brown on all sides.
- Add onion and garlic to the pot, cooking until the onion is translucent.
- Stir in the carrots, celery, and potatoes, cooking for another 5 minutes.
- Add diced tomatoes, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours, until the beef is tender.
- Adjust seasoning as needed. Serve hot, garnished with chopped parsley.
