This easy beef stir-fry is quick, delicious, and packed with vegetables, making it the perfect weeknight dinner.

- 1 lb beef sirloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a bowl, combine the beef, soy sauce, and cornstarch. Let it marinate for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the beef and cook until browned, about 3-4 minutes. Remove from pan and set aside.
- In the same skillet, add the remaining oil and sauté the bell pepper, broccoli, and carrot until tender, about 4-5 minutes.
- Add the garlic and ginger, stirring for an additional minute.
- Return the beef to the skillet, mix well, and cook for another 2 minutes. Season with salt and pepper to taste.
- Serve over cooked rice.
