- 2 pounds of lean beef (such as flank steak or sirloin)
- 1/4 cup soy sauce
- 1/4 cup Worcestershire sauce
- 2 tablespoons brown sugar
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon red pepper flakes (optional for heat)
- 1 teaspoon liquid smoke (optional for added flavor)
Instructions
- Slice the beef into thin strips (1/8 to 1/4 inch thick) against the grain for tenderness.
- In a bowl, mix together soy sauce, Worcestershire sauce, brown sugar, onion powder, garlic powder, black pepper, smoked paprika, red pepper flakes, and liquid smoke until well combined.
- Place the beef strips in a large resealable plastic bag or shallow dish and pour the marinade over the meat. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
- Remove the beef from the marinade and pat dry with paper towels to remove excess liquid.
- Arrange the beef strips in a single layer on the dehydrator trays, making sure they are not touching.
- Set the dehydrator to 160°F (70°C) and dry the beef for 6-8 hours, or until it is dry and chewy but not brittle.
- Once dried, let the jerky cool to room temperature before storing it in an airtight container.
Notes
- For best results, use lean cuts of beef to minimize fat content, which can spoil the jerky.
- Feel free to adjust the spices and seasonings to your taste preferences.
- You can store the jerky in an airtight container at room temperature for 1-2 weeks, or in the refrigerator for longer shelf life.
