  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons flour (for thickening, optional)

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides.
  2. Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.
  3. Stir in the carrots, potatoes, beef broth, red wine (if using), tomato paste, thyme, rosemary, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender.
  5. If you prefer a thicker stew, mix flour with a little bit of water to create a slurry, and stir it into the stew during the last 20 minutes of cooking.
  6. Taste and adjust seasoning as needed before serving.

Notes

  • For extra flavor, you can add a bay leaf while simmering and remove it before serving.
