A hearty beef stew made with tender chunks of beef, carrots, potatoes, and a rich, flavorful broth. Perfect for a cozy dinner.

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons flour (for thickening, optional)
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides.
- Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.
- Stir in the carrots, potatoes, beef broth, red wine (if using), tomato paste, thyme, rosemary, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender.
- If you prefer a thicker stew, mix flour with a little bit of water to create a slurry, and stir it into the stew during the last 20 minutes of cooking.
- Taste and adjust seasoning as needed before serving.
Notes
- For extra flavor, you can add a bay leaf while simmering and remove it before serving.
- Serve with crusty bread for a complete meal.
