Ingredients

- 2 lbs beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place the chopped onion at the bottom of the crockpot.
- Add the beef chuck roast on top of the onions.
- Sprinkle minced garlic, carrots, and potatoes over the beef.
- In a bowl, mix together beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Pour the broth mixture over the beef and vegetables in the crockpot.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
- Once cooked, shred the beef with two forks and mix everything together before serving.
Notes
- For extra flavor, add a splash of red wine to the broth.
- Feel free to experiment with other vegetables like bell peppers or peas.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
