Ingredients

  • 1 onion, chopped

  • 4 potatoes, diced

  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chopped onion at the bottom of the crockpot.
  2. Add the beef chuck roast on top of the onions.
  3. Sprinkle minced garlic, carrots, and potatoes over the beef.
  4. In a bowl, mix together beef broth, Worcestershire sauce, thyme, salt, and pepper.
  5. Pour the broth mixture over the beef and vegetables in the crockpot.
  6. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  7. Once cooked, shred the beef with two forks and mix everything together before serving.

Notes

  • For extra flavor, add a splash of red wine to the broth.
