- 1 teaspoon dried thyme

Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef chuck steak with salt and pepper on both sides.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the steak for 4-5 minutes on each side until browned.
- Remove the steak from the skillet and set aside. In the same skillet, add onions and garlic, sautéing until softened.
- Add carrots and celery, cooking for an additional 3-4 minutes.
- Return the steak to the skillet, add beef broth, thyme, and rosemary. Bring to a simmer.
- Cover the skillet and transfer it to the oven. Bake for 2.5 to 3 hours or until the meat is fork-tender.
- Remove from the oven, let it rest for 10 minutes before slicing. Serve warm.
