- 1 lb ground beef
- 1 cup cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Sour cream and guacamole for serving (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the chili powder, cumin, salt, and pepper to the beef. Stir to combine.
- Stir in the cooked rice, black beans, and salsa. Cook until heated through, about 5 minutes.
- Warm the tortillas in a dry skillet or microwave until pliable.
- To assemble, place a portion of the beef mixture in the center of each tortilla. Sprinkle with shredded cheese.
- Fold the sides of the tortilla over the filling, then roll from the bottom to the top to enclose the filling.
- If desired, grill the burritos in the skillet for 2-3 minutes on each side until golden.
- Serve with sour cream and guacamole on the side.
