  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Sour cream and guacamole for serving (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add the chili powder, cumin, salt, and pepper to the beef. Stir to combine.
  3. Stir in the cooked rice, black beans, and salsa. Cook until heated through, about 5 minutes.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. To assemble, place a portion of the beef mixture in the center of each tortilla. Sprinkle with shredded cheese.
  6. Fold the sides of the tortilla over the filling, then roll from the bottom to the top to enclose the filling.
  7. If desired, grill the burritos in the skillet for 2-3 minutes on each side until golden.
  8. Serve with sour cream and guacamole on the side.
