- 1 lb boneless, skinless chicken breasts (cut into 1-inch cubes)
- 1 cup buttermilk
- 1 cup panko breadcrumbs
- 1/2 cup flour
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tsp honey
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for 30 minutes (skip if using metal skewers).
- Marinate chicken cubes in buttermilk for at least 30 minutes.
- Preheat grill or oven to 375°F (190°C).
- Combine panko, flour, garlic powder, paprika, salt, and pepper in a bowl.
- Remove chicken from buttermilk, coat evenly in the breadcrumb mixture.
- Thread chicken onto skewers.
- Grill or bake for 12-15 minutes, flipping halfway, until golden and cooked through.
- Mix mayonnaise, sweet chili sauce, sriracha, and honey in a bowl for the sauce.
- Drizzle sauce over cooked skewers before serving.
Notes
- For extra crispiness, double-coat the chicken in breadcrumbs.
- Adjust sriracha for more or less heat.
- Serve with extra sauce on the side.
