- 1 cup (200g) granulated sugar
- 1/3 cup (40g) all-purpose flour
- 1/4 teaspoon salt
- 2 cups (480ml) whole milk
- 3 large egg yolks, beaten
- 2 tablespoons (30g) unsalted butter
- 1 teaspoon vanilla extract
- 4 ripe bananas, sliced
- 1 box (11 oz) vanilla wafers
- Whipped cream, for topping (optional)
Instructions
- In a medium saucepan, whisk together sugar, flour, and salt. Gradually whisk in milk and beaten egg yolks until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil, about 10 minutes.
- Remove from heat and stir in butter and vanilla extract until fully combined.
- In a 9×13 inch dish, layer half of the vanilla wafers, followed by half of the sliced bananas, and half of the pudding mixture. Repeat the layers with the remaining ingredients.
- Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld and pudding to set.
- Before serving, top with whipped cream if desired. Enjoy!

- For added flavor, you can use banana extract or add a pinch of cinnamon to the pudding mixture.
- Store any leftovers in the refrigerator for up to 3 days.
