  • 4 ripe bananas, sliced
  • 1 box (11 oz) vanilla wafers
  • Whipped cream, for topping (optional)

Instructions

  1. In a medium saucepan, whisk together sugar, flour, and salt. Gradually whisk in milk and beaten egg yolks until smooth.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil, about 10 minutes.
  3. Remove from heat and stir in butter and vanilla extract until fully combined.
  4. In a 9×13 inch dish, layer half of the vanilla wafers, followed by half of the sliced bananas, and half of the pudding mixture. Repeat the layers with the remaining ingredients.
  5. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld and pudding to set.
