Ingredients

  • 4 chicken breast fillets (approx. 600 g)
  • 150 g pesto sauce (green)
  • 200 g mozzarella cheese (grated or sliced)
  • 250 g cherry tomatoes (halved)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (180°C fan-assisted).
  2. Rinse the chicken breast fillets under cold water and pat dry with a paper towel. Season with salt and pepper.
  3. Generously rub the chicken breast fillets with the pesto sauce to ensure they are evenly coated.
  4. Grease a baking dish with olive oil and place the pesto-coated chicken breast fillets in it.
  5. Sprinkle the grated mozzarella evenly over the chicken breast fillets. Arrange the halved cherry tomatoes around the chicken in the baking dish.
  6. Bake for approximately 25-30 minutes, until the chicken is cooked through and the cheese is melted and lightly golden brown.
  7. Remove from the oven and let it rest briefly. Then arrange it on plates and serve with fresh bread or a green salad.
