A light and refreshing summer take on the viral baked feta pasta, featuring seasonal vegetables and fresh herbs.
Ingredients

- 8 oz Feta cheese (Block or crumbled)
- 2 cups Cherry tomatoes (Halved)
- 2 tbsp Olive oil (Extra virgin)
- 3 cloves Garlic (Minced)
- 8 oz Pasta (Fusilli or penne recommended)
- 1/4 cup Fresh basil (Chopped)
- to taste Salt
- to taste Black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine the cherry tomatoes, olive oil, minced garlic, salt, and black pepper. Mix well.
- Add the block of feta cheese in the center of the tomatoes.
- Bake in the preheated oven for 30 minutes, or until the tomatoes are blistered and the feta is soft.
- While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the baking is done, remove the dish from the oven. Use a fork to mash the feta and mix it with the tomatoes to create a creamy sauce.
- Add the cooked pasta to the baking dish and toss to combine.
- Stir in the chopped fresh basil and adjust seasoning with more salt and pepper if desired.
- Serve warm and enjoy your summer baked feta pasta!
