Ingredients

- 2 ripe avocados, diced
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (15 oz) black beans, rinsed and drained
- 1 medium red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine diced avocados, corn, black beans, red onion, cherry tomatoes, and cilantro.
- In a small bowl, whisk together lime juice, cumin, salt, and pepper.
- Pour the dressing over the salsa ingredients and gently toss to combine.
- Taste and adjust seasoning if necessary.
- Serve immediately with tortilla chips or as a topping for tacos.
Notes
- For best results, serve the salsa fresh. If you need to store it, keep it in an airtight container in the refrigerator for up to 1 day.
- To prevent avocados from browning, you can add a little extra lime juice or cover the surface tightly with plastic wrap.
