This delicious apricot tart features a buttery crust filled with a rich almond cream and topped with fresh apricots. Perfect for a summer dessert!

- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons cold water
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 8–10 fresh apricots, halved and pitted
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine flour, powdered sugar, and salt. Add the chilled butter and mix until crumbly.
- Add the egg yolk and cold water. Mix until the dough comes together. Press into a tart pan and blind bake for 15 minutes.
- In another bowl, mix almond flour, granulated sugar, softened butter, egg, vanilla extract, and almond extract until smooth.
- Spread the almond cream over the baked tart crust. Arrange apricot halves on top, cut side up.
- Bake for an additional 25-30 minutes, or until the apricots are tender and the almond cream is set.
- Allow to cool before serving. Enjoy!
