  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1/2 cup almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 810 fresh apricots, halved and pitted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, powdered sugar, and salt. Add the chilled butter and mix until crumbly.
  3. Add the egg yolk and cold water. Mix until the dough comes together. Press into a tart pan and blind bake for 15 minutes.
  4. In another bowl, mix almond flour, granulated sugar, softened butter, egg, vanilla extract, and almond extract until smooth.
  5. Spread the almond cream over the baked tart crust. Arrange apricot halves on top, cut side up.
  6. Bake for an additional 25-30 minutes, or until the apricots are tender and the almond cream is set.
  7. Allow to cool before serving. Enjoy!
