Description

Tender beef short ribs braised in apple cider with aromatic vegetables and herbs.


Ingredients

  • 3 lbs beef short ribs
  • 2 cups apple cider
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Season short ribs with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat.
  4. Sear ribs on all sides until browned, then remove.
  5. Add onion, carrots, celery, and garlic to the pot. Cook until softened.
  6. Stir in tomato paste and cook for 1 minute.
  7. Pour in apple cider, scraping the bottom of the pot.
  8. Return ribs to the pot. Add thyme and bay leaf.
  9. Cover and braise in the oven for 3 hours.
  10. Remove ribs and strain the sauce if desired.

Notes

  • Browning the ribs adds flavor.
  • Use a Dutch oven for even cooking.
  • Serve with mashed potatoes or polenta.
