Description
Tender beef short ribs braised in apple cider with aromatic vegetables and herbs.
Ingredients

- 3 lbs beef short ribs
- 2 cups apple cider
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 2 sprigs fresh thyme
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 325°F (165°C).
- Season short ribs with salt and pepper.
- Heat olive oil in a Dutch oven over medium-high heat.
- Sear ribs on all sides until browned, then remove.
- Add onion, carrots, celery, and garlic to the pot. Cook until softened.
- Stir in tomato paste and cook for 1 minute.
- Pour in apple cider, scraping the bottom of the pot.
- Return ribs to the pot. Add thyme and bay leaf.
- Cover and braise in the oven for 3 hours.
- Remove ribs and strain the sauce if desired.
Notes
- Browning the ribs adds flavor.
- Use a Dutch oven for even cooking.
- Serve with mashed potatoes or polenta.
