Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 cup diced apple

Instructions

  1. Preheat oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flours, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk yogurt, honey, milk, egg, and melted butter.
  4. Combine wet and dry ingredients, then fold in diced apple.
  5. Divide batter evenly into muffin cups.
  6. Bake for 18-20 minutes until a toothpick comes out clean.
  7. Cool before serving.

Notes

  • Use full-fat Greek yogurt for best texture.
  • Substitute honey with maple syrup if preferred.
